Assemble the Kimchi: Place the chopped kale into a mason jar or any airtight container. Pour the marinade mixture over the kale, ensuring that all the kale is coated. Add filtered water until the kale is submerged. If you want to add a bit more tanginess, a splash of white vinegar can be included.
